This is one of my family’s signature dishes. I love this dish so much! For some of you that may or may not know, snow pea sprouts is a Chinese delicacy. It’s soft, gentle texture that pairs brilliantly well with goji berries. Goji berries have a soft, semi-sweet flavor that takes this dish to a whole new level. It’s also very easy and quick to make. What’s not to love?
Ingredients:
- 1 tablespoon vegetable oil
- 3 cloves of garlic, minced
- 2 cups of snow pea sprouts, washed
- 1/2 cup dried goji berries
- Salt and black pepper to taste
Directions:
Soak goji berries in warm water for 15 minutes, then proceed to drain but remember to reserve a 1/4 cup of the juices.
In a medium size wok or frying pan over medium-high heat, heat vegetable oil. Add garlic and snow pea sprouts. Cook until they are almost wilted, approximately 3-6 minutes. Add goji berries and its juices. Cook until almost all the liquid has evaporated. Season with salt and pepper.
