Breakfast is the most important meal of the day. Hands down. Whenever I don’t have breakfast, I don’t have enough energy to get through the morning. So I purposely wake up early just to make myself breakfast. For the longest time, it always contains 2 scrambled eggs, 2 toasts with peanut butter, and coffee. For a month now, I tried making a folded omelet and it tastes way better. Adding it with cheese on the inside and now it is something worth waking up for. It may take an extra 2-3 minutes to cook, but it’s well worth it for the first meal of the day. Keep in mind unlike all recipes here which are generally easier to make, this is one of the more challenging ones to produce. It all takes practice
Ingredients:
1 tablespoon vegetable oil or butter
2 cracked eggs
A sprinkle of your favorite cheese
Salt and pepper to taste
Chopped or dried parsley for garnish
Directions:
In a small mixing bowl, beat the eggs.
In a small non-stick frying pan over medium heat, heat up the oil or melt the butter. Pour in the eggs and using a rubber spatula, stir the eggs to prevent them from sticking to the pan. Cook for 2-3 minutes.
Add the cheese onto one side of the omelet and season with salt and pepper. Carefully fold the egg starting the cheese side, making sure it doesn’t break or the cheese runs out. Cook for another minute to seal the ends of the omelet.
Remove the omelet from the pan and garnish it with parsley
