Tuna Pasta Salad

Fun story behind this recipe: I help a friend of mine to get settled into his new place and as a welcome gift, I gave him some kitchen equipment and some recipes. I stumbled this old recipe in my archive. I tested this out and it turned out way easier, and faster than I remembered. This salad will take you no longer 30 minutes to make. Perfect for a small snack, a side for a meal or a good protein boost.

Ingredients:

1 cup elbow pasta

1 8oz tuna can, drained

¼ cup celery, diced

¼ cup green onion, diced

1 cup mayo

¼ cup red onion

½ cup frozen melody mix

Directions:

In a small pot, bring a pot of water to a boil. Cook the pasta by following the cooking instructions. 

While the pasta is cooking, mix in the tuna, celery, green onion, mayo, and red onion into a medium mixing bowl.

When the pasta is done, add into the mix. Using the leftover pasta water, add in the frozen melody mix and cook for 1 minute before straining it and adding it to the mixing bowl

Give everything a good mix and serve cold in a glass or plastic bowl.
